How to Make a Healthy Eggplant Salad.

What You Need:

Main ingredient
2 medium size eggplant
1 onion
1 whole head of garlic
3-4 tomatoes
1 green pepper
1/2 cup vegetable oil

Seasoning
1tbs salt, pepper & allspice
1/2 red cayenne pepper
1/2 thyme leaves

Salsa
2 1/2 cup plain yogurt
1 cup tahini paste
1/2 cup lemon juice
1/2tsp salt

Garnish
1/4 cup sliced almonds
Chopped parsley if desired
